Physical Properties - Solubility (cont.)
Solubility does not always mean a liquid dissolving a solid.  Solubility may also refer to two liquids being mixed.

For example, let's look at the water and acetone from the previous slide.  Acetone is water-soluble.  When acetone is mixed with water, it dissolves completely.  There is no separation of the two liquids.  There is another term for solubility when we are discussing liquids: when two liquids are soluble together, we say the liquids are miscible.

Oil, on the other hand, is not water-soluble.  When oil is mixed with water, it does not dissolve.  There is a separation between the two liquids.  In this case, we say the liquids are immiscible.  Why does oil float on top of water instead of the other way around?  (Hint: Think about density!)
